Pesto Chicken & Orzo

This quick and easy recipe will have you putting Pesto Chicken & Orzo on your weeknight rotation. 5 minutes of prep then just let it bake!

Pesto Chicken & Orzo

Ingredients:

2 boneless, skinless chicken breasts (about 1 pound)

2 cups (16 ounces) dry orzo

7 ounces prepared pesto

1 cup cherry tomatoes, cut in half

2 cups chicken broth

1 cup feta cheese


To Prepare:

  1. Preheat oven to 375

  2. Grease a 9x13 casserole dish

  3. Cut up chicken breasts into bite sized pieces

  4. Pour the orzo in the bottom of the casserole dish evenly.

  5. Top with chicken pieces and tomatoes.

  6. In a bowl, whisk together the pesto and broth. Pour evenly over the orzo.

  7. Sprinkle feta cheese on top.

  8. Cover and bake 30 minutes. Uncover and bake another 10-15 minutes.
