Pesto Chicken & Orzo
This quick and easy recipe will have you putting Pesto Chicken & Orzo on your weeknight rotation. 5 minutes of prep then just let it bake!
Ingredients:
2 boneless, skinless chicken breasts (about 1 pound)
2 cups (16 ounces) dry orzo
7 ounces prepared pesto
1 cup cherry tomatoes, cut in half
2 cups chicken broth
1 cup feta cheese
To Prepare:
Preheat oven to 375
Grease a 9x13 casserole dish
Cut up chicken breasts into bite sized pieces
Pour the orzo in the bottom of the casserole dish evenly.
Top with chicken pieces and tomatoes.
In a bowl, whisk together the pesto and broth. Pour evenly over the orzo.
Sprinkle feta cheese on top.
Cover and bake 30 minutes. Uncover and bake another 10-15 minutes.
