Fajita Steak Bowl
The great thing about this Fajita Steak Bowl recipe is that not only is it easy and delicious, but you can vary the amounts of everything based on what you like and don't like! This recipe serves 3-4.
Ingredients:
1 1/2 lbs flank steak, sliced into strips
2 8.5 ounces packets Cilantro lime rice, cooked (you can add more rice if you a bigger meal)
1 15 ounce can black beans, drained
1 10 ounce can Rotel, drained
2-3 bell peppers, sliced into strips
1 sweet onion, sliced into strips
1 packet taco or fajita seasoning
1/4 cup diced red onion
1-2 jalapenos, seeded and diced
1 cup sharp cheddar
1-2 avocados, sliced
Cook the rice per the packet instructions and divide amongst the bowls.
Combine the black beans and rotel and simmer over low heat.
In a large saucepan, add 1-2 tbsp olive oil then add the sweet onions, steak strips, and seasoning. Cook for several minutes, tossing and stirring well. Add the sliced bell peppers. Continue cooking, tossing and stirring well, until steak is desired doneness.
Divide the diced red onions, jalapenos, black bean and rotel mixture, and avocado in each bowl. Top with the steak mixture and cheddar cheese.
Serve and enjoy!
